In the world of specialty coffee, the term "washed coffee" often comes up—and for good reason. Also known as the wet process, washed coffee is one of the most popular methods of coffee processing. But what exactly does it mean, and how does it affect the final cup?
What Is Washed Coffee?
Washed coffee refers to a method of processing coffee cherries where the fruit's outer pulp is removed before the beans are dried. This process emphasizes clarity and purity in the cup, allowing the bean's inherent characteristics—like its acidity, sweetness, and flavor nuances—to shine through without influence from the fruit’s sugars.
How the Washed Process Works
Harvesting: Ripe coffee cherries are selectively picked to ensure only the best fruits are processed.
Depulping: Shortly after harvest, the outer skin and pulp are mechanically removed from the cherries, leaving the beans covered in a sticky mucilage.
Fermentation: The beans are then placed in fermentation tanks with water. During this controlled fermentation period (which can last from 12 to 72 hours), naturally occurring microbes break down the mucilage.
Washing: Once fermentation is complete, the beans are thoroughly washed to remove any remaining mucilage.
Drying: The clean beans are spread out on raised beds or patios to dry under the sun. They’re turned regularly to ensure even drying and to prevent spoilage.
Flavor Profile of Washed Coffee
Because the fruit sugars are removed early in the process, washed coffees tend to have a more "transparent" flavor profile. Common traits include:

The washed process is labor-intensive and requires significant access to water, making it more feasible in certain regions like Colombia, Ethiopia, and parts of Central America. Despite its challenges, the method is highly valued for the consistent, clean, and high-quality results it produces.
